Rendang is one of the Malay’s traditional food, this cuisine is famous during raya, fred not, as you don’t have to wait for season to come to indulge this delicious meal. What you will need?
Ingredients A
- 600g of diced boneless beef short ribs.
- 5 tbsp cooking oil
- 1 stick cinnamon
- 3 cloves,
- 3 star anise
- 3 Cardamom pods
- 1 lemongrass, cut into 3 – inch length and pounded
- 1 cup thick of coconut milk, coconut cream
- 1 cup of water.
- 6 kaffir lime leaves, finely sliced.
- 6 tbspn of sugar to taste.
- Some salt to taste.
Ingredients B
Blended – 5 shallots, 1 inch galangal, 3 lemongrass (white part only), 5 cloves garlic,
1 inch ginger, 11 dried chillies soaked in warm water and seeded.
Here’s how it’s done.
- Turn on the ignition point on the kitchen hob, and turn the ignition knob anti-clockwise.
- Heat the oil in the stew pot, add the ingredients B, cinnamon, cloves star anise, and cardamom, stir fry until the aroma arise.
*Let the kitchen hood does the job if there is too much cloud in the kitchen.
- Add beef and pounded lemongrass and stir for 1 minute.
- Add coconut milk, tamarind juice, water and simmer on medium heat.
- Add kaffir lime leaves, sugar and stir well.
- Turn the ignition knob to low heat. Simmer until the meat is tender.
- Add more salt and sugar.
- That’s it! You’re good to go.
